Ingredients
- 1 large Egg
- 1/3 cup Cottage Cheese (full-fat recommended, blended until smooth) or Greek Yogurt
- 3 tbsp Unsweetened Cocoa Powder
- 1-2 tbsp Sweetener of choice (e.g., maple syrup, monk fruit)
- 1 tbsp Chocolate Chips (plus extra for topping)
Instructions
- If using cottage cheese, add it to a high-speed blender and blend until completely smooth. This step is key for a creamy, non-grainy texture.
- In a medium bowl, whisk together the egg and the blended cottage cheese (or Greek yogurt) until combined.
- Add the cocoa powder and sweetener, and whisk until the batter is smooth.
- Fold in the chocolate chips.
