The Classic Microwave Protein Brownie

  • Author: Marla Jennings
  • Total Time: 2 minutes
  • Yield: 1 Brownie
  • Diet: Gluten Free

Description

Ready in just one minute, this gooey and delicious protein brownie is the perfect guilt-free fix for any chocolate craving. It packs over 25 grams of protein and tastes like a rich, fudgy brownie, making it the ideal post-workout treat or single-serving dessert.

Ingredients

  • 1 scoop Chocolate Protein Powder (Casein or a blend works best)
  • 1 tbsp Coconut Flour
  • 1 1/2 tbsp Cocoa Powder
  • 2 tsp Sweetener of choice (e.g., erythritol, monk fruit)
  • 1/2 tsp Baking Powder
  • 1 large Egg
  • 1/4 cup Milk of choice (e.g., unsweetened almond milk)
  • 1 tbsp Chocolate Chips (optional)

Instructions

  1. In a small, microwave-safe mug or bowl, combine all the dry ingredients (protein powder, coconut flour, cocoa powder, sweetener, and baking powder) and mix well to prevent clumps.
  2. Add the egg and milk to the dry mixture and stir until a smooth batter is formed.
  3. Fold in the chocolate chips, if using.
  4. Microwave on high for 60 seconds. Be careful not to overcook to maintain a gooey center. For a more lava-cake consistency, cook for less time; for a firmer, more cake-like texture, cook for a few seconds longer.
  5. Let the brownie rest for 20-30 seconds before enjoying.
