Description

Ingredients

  • 12 Large Eggs
  • 1/3 cup Mayonnaise
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon White-Wine Vinegar or 2 tablespoons Pickle Juice
  • Salt & Pepper to Taste
  • Food Coloring of Your Choice (Pink Recommended)
  • Optional Decorations: Edible flowers, paprika, or fresh herbs


Instructions

  1. Fill a large pot with water and gently place the eggs inside. Bring the water to a boil, then cover and remove from heat. Let them sit for 10-12 minutes.
  2. Transfer the boiled eggs to an ice bath to cool for about 5 minutes. Gently crack the shells and peel under running water for easier removal.
  3. In a small bowl, mix a few drops of food coloring with water. Dip the peeled eggs into the mixture, allowing them to soak until they reach your desired shade.
  4. In a bowl, mash the yolks with mayonnaise, Dijon mustard, vinegar/pickle juice, salt, and pepper until smooth.
  5. Using a piping bag or a spoon, fill the egg whites with the yolk mixture. Sprinkle with any optional decorations like paprika or fresh herbs.
  6. Place the filled eggs in the fridge for at least 30 minutes, then serve and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Avoid freezing.
