Ingredients
- 12 Large Eggs
- 1/3 cup Mayonnaise
- 1 tablespoon Dijon Mustard
- 1 teaspoon White-Wine Vinegar or 2 tablespoons Pickle Juice
- Salt & Pepper to Taste
- Food Coloring of Your Choice (Pink Recommended)
- Optional Decorations: Edible flowers, paprika, or fresh herbs
Instructions
- Fill a large pot with water and gently place the eggs inside. Bring the water to a boil, then cover and remove from heat. Let them sit for 10-12 minutes.
- Transfer the boiled eggs to an ice bath to cool for about 5 minutes. Gently crack the shells and peel under running water for easier removal.
- In a small bowl, mix a few drops of food coloring with water. Dip the peeled eggs into the mixture, allowing them to soak until they reach your desired shade.
- In a bowl, mash the yolks with mayonnaise, Dijon mustard, vinegar/pickle juice, salt, and pepper until smooth.
- Using a piping bag or a spoon, fill the egg whites with the yolk mixture. Sprinkle with any optional decorations like paprika or fresh herbs.
- Place the filled eggs in the fridge for at least 30 minutes, then serve and enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Avoid freezing.
