Description

A quick and flavorful dish featuring tender calamari poached in a savory garlic white wine broth.

Ingredients

  • 1 pound calamari, cleaned and cut into rings
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup dry white wine (like Sauvignon Blanc)
  • 2 cups fish stock or water
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Pour in the dry white wine and bring to a gentle simmer.
  4. Add the fish stock (or water) and red pepper flakes, then season with salt and pepper. Bring this mixture to a rapid boil.
  5. Reduce the heat to medium-low and carefully add the cleaned calamari. Poach for about 2-3 minutes, until tender.
  6. Remove from heat and let rest for a minute before serving.

Notes

Ensure the calamari is cleaned thoroughly and do not overcook to avoid a rubbery texture. Garnish with parsley and serve with lemon wedges.
