Ingredients
- 1 pound calamari, cleaned and cut into rings
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup dry white wine (like Sauvignon Blanc)
- 2 cups fish stock or water
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Pour in the dry white wine and bring to a gentle simmer.
- Add the fish stock (or water) and red pepper flakes, then season with salt and pepper. Bring this mixture to a rapid boil.
- Reduce the heat to medium-low and carefully add the cleaned calamari. Poach for about 2-3 minutes, until tender.
- Remove from heat and let rest for a minute before serving.
Notes
Ensure the calamari is cleaned thoroughly and do not overcook to avoid a rubbery texture. Garnish with parsley and serve with lemon wedges.
