A hearty breakfast casserole filled with sausage, hash browns, eggs, and cheese, perfect for family gatherings.
Ingredients
- 1 pound breakfast sausage
- 6 green onions, chopped
- 1 red bell pepper, chopped
- 10 large eggs
- 1¼ cups heavy cream
- 1 tablespoon Dijon mustard
- 1-2 teaspoons Tabasco sauce
- 1½ teaspoons salt
- 1 teaspoon black pepper
- 3 cups sharp cheddar cheese, shredded
- 1 (30-ounce) package frozen shredded hash browns, thawed and well-drained
Instructions
- Preheat your oven to 350°F and spray a 9×13-inch baking dish with nonstick cooking spray.
- In a skillet, cook the sausage with the red bell pepper and half of the green onions until cooked through, then let cool.
- In a bowl, whisk together the eggs, cream, mustard, hot sauce, salt, and black pepper until smooth.
- Stir in half of the cheddar cheese, the thawed hash browns, and the cooled sausage mixture.
- Pour the mixture into the prepared baking dish and smooth it into an even layer.
- Cover tightly with foil and bake for 50 minutes.
- Uncover, add the remaining cheddar cheese, increase the temperature to 400°F, and bake for an additional 10-15 minutes until set and golden.
- Let rest for 10 minutes before serving and garnish with remaining green onions.
Notes
Make ahead by assembling the casserole the night before. It freezes well for up to 2 months.
