Description

A hearty breakfast casserole filled with sausage, hash browns, eggs, and cheese, perfect for family gatherings.


Ingredients

  • 1 pound breakfast sausage
  • 6 green onions, chopped
  • 1 red bell pepper, chopped
  • 10 large eggs
  • 1¼ cups heavy cream
  • 1 tablespoon Dijon mustard
  • 1-2 teaspoons Tabasco sauce
  • 1½ teaspoons salt
  • 1 teaspoon black pepper
  • 3 cups sharp cheddar cheese, shredded
  • 1 (30-ounce) package frozen shredded hash browns, thawed and well-drained


Instructions

  1. Preheat your oven to 350°F and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a skillet, cook the sausage with the red bell pepper and half of the green onions until cooked through, then let cool.
  3. In a bowl, whisk together the eggs, cream, mustard, hot sauce, salt, and black pepper until smooth.
  4. Stir in half of the cheddar cheese, the thawed hash browns, and the cooled sausage mixture.
  5. Pour the mixture into the prepared baking dish and smooth it into an even layer.
  6. Cover tightly with foil and bake for 50 minutes.
  7. Uncover, add the remaining cheddar cheese, increase the temperature to 400°F, and bake for an additional 10-15 minutes until set and golden.
  8. Let rest for 10 minutes before serving and garnish with remaining green onions.

Notes

Make ahead by assembling the casserole the night before. It freezes well for up to 2 months.
