A delightful dessert bringing together the tropical sweetness of pineapple and buttery cake, beautifully presented for any occasion.
Ingredients
- 1/2 cup butter
- 1 cup brown sugar
- 1 can (20 oz) sliced pineapple, drained
- Maraschino cherries
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup milk
- 2 large eggs
- 1 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter in a 9-inch round cake pan until it’s bubbly.
- Evenly sprinkle the brown sugar over the melted butter.
- Arrange the pineapple slices decoratively on top and place one maraschino cherry in the center of each slice.
- Combine the flour, granulated sugar, milk, eggs, baking powder, vanilla extract, and salt in a mixing bowl. Mix until the batter is smooth.
- Carefully pour the batter over the decorated pineapple layer in the pan.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool for about 10 minutes before inverting it onto a serving platter.
- Serve it warm or at room temperature, ideally with a scoop of vanilla ice cream.
Notes
Store in an airtight container for up to 2 days at room temperature, or refrigerate for up to a week. Can be frozen for up to 3 months.
