Ingredients
- 1 box yellow cake mix
- 3 large eggs
- 1/3 cup vegetable oil
- 1 cup water
- 1 can (20 oz) pineapple slices (drained)
- 1/2 cup brown sugar
- 1/4 cup butter
- Maraschino cherries (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Melt the butter: In a small saucepan, melt the butter and mix in the brown sugar. Stir until fully combined.
- Pour into baking dish: Spread the butter-sugar mixture evenly across a 9×13 inch baking dish.
- Arrange pineapple: Place the drained pineapple slices on top of the mixture. If desired, place a Maraschino cherry in the center of each pineapple slice.
- Prepare cake mix: In a mixing bowl, combine the yellow cake mix, eggs, vegetable oil, and water. Mix until smooth.
- Pour cake batter: Gently pour the cake batter over the pineapple and sugar layer in the baking dish.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Cool and invert: Let the cake cool for a few minutes, then carefully invert onto a serving platter.
Notes
For a moister cake, slightly underbake it. Using fresh pineapple enhances the flavor.
