A nostalgic dessert with caramelized pineapple and buttery cake, perfect for any occasion.


Ingredients

  • 1/4 cup butter
  • 1 cup brown sugar
  • 1 can (20 oz) sliced pineapple in juice
  • Maraschino cherries (optional)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 large egg


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In your 9-inch round cake pan, melt the butter in the oven.
  3. Remove the pan and sprinkle the brown sugar evenly over the melted butter.
  4. Arrange the pineapple slices on top and place a cherry in the center of each slice, if you’re using them.
  5. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. In another bowl, mix the granulated sugar, milk, vegetable oil, vanilla extract, and egg until smooth.
  7. Gradually mix in the dry ingredients until combined.
  8. Pour the batter over the pineapple layer in the pan.
  9. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool for 10 minutes, then invert onto a serving plate and serve warm.

Notes

Feel free to swap butter for margarine or try a gluten-free flour blend if needed. Store in an airtight container for up to 2 days at room temperature or up to a week in the refrigerator. Can be frozen for up to 3 months.
