A nostalgic dessert with caramelized pineapple and buttery cake, perfect for any occasion.
Ingredients
- 1/4 cup butter
- 1 cup brown sugar
- 1 can (20 oz) sliced pineapple in juice
- Maraschino cherries (optional)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C).
- In your 9-inch round cake pan, melt the butter in the oven.
- Remove the pan and sprinkle the brown sugar evenly over the melted butter.
- Arrange the pineapple slices on top and place a cherry in the center of each slice, if you’re using them.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, mix the granulated sugar, milk, vegetable oil, vanilla extract, and egg until smooth.
- Gradually mix in the dry ingredients until combined.
- Pour the batter over the pineapple layer in the pan.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool for 10 minutes, then invert onto a serving plate and serve warm.
Notes
Feel free to swap butter for margarine or try a gluten-free flour blend if needed. Store in an airtight container for up to 2 days at room temperature or up to a week in the refrigerator. Can be frozen for up to 3 months.
