Ingredients
- 1/4 cup butter
- 1 cup brown sugar
- 1 can pineapple rings (drained)
- Maraschino cherries
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a 9-inch round cake pan, melt the butter over medium heat. Once melted, sprinkle the brown sugar evenly on top.
- Arrange the pineapple rings on top of the butter and sugar mixture, placing a maraschino cherry in the center of each ring.
- In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In another bowl, beat together the milk, eggs, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just mixed.
- Pour the batter evenly over the arranged pineapple and cherries in the pan.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow it to cool for a few minutes before carefully inverting onto a serving plate.
