Description

A nostalgic and visually delightful Pineapple Upside Down Cake that combines sweet, caramelized pineapple with a moist cake, perfect for celebrations and potlucks.


Ingredients

  • 1 Box Yellow Cake Mix (plus required ingredients—usually Eggs & Oil)
  • 1 Can Pineapple Rings
  • 1 Jar Maraschino Cherries
  • 1 Stick Butter
  • 1/2 Cup Brown Sugar


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter and brown sugar in a saucepan over medium heat until combined. Pour into a greased Bundt pan.
  3. Drain the juice from the pineapple rings into a measuring cup and slice some rings in half if desired.
  4. Arrange the pineapple rings and cherries in the Bundt pan.
  5. Combine the cake mix, eggs, oil, and reserved pineapple juice in a bowl.
  6. Pour the batter over the pineapple and cherries.
  7. Bake for 38-45 minutes or until a toothpick comes out clean.
  8. Cool for 10 minutes, then invert onto a plate and let it cool completely before serving.

Notes

You can substitute the yellow cake mix with a gluten-free version if needed. Serve with ice cream or whipped cream for an extra treat.
