Description

A delicious and nostalgic dessert featuring a golden caramelized pineapple topping over a buttery cake.


Ingredients

  • 1/4 cup butter
  • 1 cup brown sugar
  • 1 can (20 oz) pineapple slices
  • Maraschino cherries (about 10)
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Melt the butter in a small saucepan. Mix in the brown sugar until dissolved. Pour this mixture into the bottom of your prepared cake pan.
  3. Arrange the pineapple slices on top of the brown sugar mixture, placing a cherry in the center of each pineapple slice.
  4. Combine the flour, granulated sugar, baking powder, and salt in a mixing bowl. In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract. Gradually combine the wet and dry ingredients until well mixed.
  5. Pour the cake batter over the pineapple layer in the pan.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool for about 5 minutes before inverting it onto a serving plate. Serve warm or at room temperature.

Notes

For a more adventurous flavor, consider adding a pinch of cinnamon or nutmeg to the batter.
