Description
A delicious and nostalgic dessert featuring a golden caramelized pineapple topping over a buttery cake.
Ingredients
- 1/4 cup butter
- 1 cup brown sugar
- 1 can (20 oz) pineapple slices
- Maraschino cherries (about 10)
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Melt the butter in a small saucepan. Mix in the brown sugar until dissolved. Pour this mixture into the bottom of your prepared cake pan.
- Arrange the pineapple slices on top of the brown sugar mixture, placing a cherry in the center of each pineapple slice.
- Combine the flour, granulated sugar, baking powder, and salt in a mixing bowl. In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract. Gradually combine the wet and dry ingredients until well mixed.
- Pour the cake batter over the pineapple layer in the pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool for about 5 minutes before inverting it onto a serving plate. Serve warm or at room temperature.
Notes
For a more adventurous flavor, consider adding a pinch of cinnamon or nutmeg to the batter.
