Ingredients
- 2 cups fresh pineapple, chopped (can substitute with canned pineapple in juice)
- 1/2 cup lime juice (about 4 limes, freshly squeezed)
- Sweetener of choice (honey, agave, or sugar—optional, to taste)
Instructions
- Blend Ingredients: In a blender, combine the chopped pineapple and lime juice. If you prefer your pops a bit sweeter, add sweetener to taste.
- Blend Until Smooth: Puree the mixture until it’s smooth. You can strain it through a fine mesh sieve for a less pulpy texture.
- Pour into Molds: Carefully pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert Sticks: Place popsicle sticks into each mold.
- Freeze: Freeze for at least 360 minutes, or until completely solid.
- Enjoy: Once frozen, remove the pops from the molds by running them under warm water for a few seconds.
Notes
For a richer flavor, drizzle with coconut cream before serving. These pops can be stored in an airtight container for up to 2 months.
