Ingredients
- 1 lb Chicken breast, cut into chunks
- 1 cup Pineapple chunks (fresh or canned)
- 1 Red bell pepper, chopped
- 1 Green bell pepper, chopped
- 2 tbsp Olive oil
- 2 tbsp Soy sauce
- 2 cloves Garlic, minced
- 1 inch Ginger, minced
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- Mix Marinade: In a bowl, combine olive oil, soy sauce, garlic, ginger, salt, and pepper.
- Marinate Chicken: Add the chicken chunks to the marinade. Let it sit for a minimum of 30 minutes to absorb the flavors.
- Preheat Grill: Bring your grill to medium-high heat.
- Assemble Skewers: Thread the marinated chicken, pineapple, and bell peppers onto skewers, alternating as you go.
- Grill Kabobs: Place the skewers on the grill. Cook for 10-15 minutes, turning occasionally, until the chicken is thoroughly cooked and features beautiful grill marks.
- Serve Hot: Pair your kabobs with rice, a fresh salad, or your favorite dipping sauce.
Notes
If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning. Serve with coconut rice or a tangy coleslaw for added flavor.
