Description
A refreshing lemon herb grilled chicken dish that’s perfect for summer gatherings, featuring a succulent texture and vibrant flavors.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Juice of 2 lemons
- Zest of 1 lemon
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Prepare the Marinade: In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper.
- Marinate the Chicken: Place chicken breasts in a zip-top bag, pour the marinade over the chicken, and seal. Refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
- Preheat the Grill: Set your grill to medium-high heat and ensure the grates are clean for the perfect sear.
- Grill the Chicken: Remove chicken from the marinade, letting excess drip off. Place on the hot grill. Cook for about 6-7 minutes on each side or until internal temperature reaches 165°F (75°C).
- Rest and Serve: Let the chicken rest for 5 minutes before slicing to retain juices.
Notes
Consider adding honey to the marinade or using chicken thighs instead of breasts for added moisture and flavor.
