Ingredients

  • Ciabatta bread
  • Pea pesto (store-bought or homemade)
  • Extra virgin olive oil
  • Cheese (Parmesan, ricotta, or your preference)
  • Lemon zest
  • Fresh pea shoots (optional for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the ciabatta bread into ½ inch thick pieces and place them on a baking tray.
  3. Toast the slices in the oven until golden brown, around 5-7 minutes.
  4. Remove from the oven and spread a generous amount of pea pesto on each slice.
  5. Drizzle with a high-quality extra virgin olive oil.
  6. Sprinkle your choice of cheese on top and add a dash of lemon zest.
