Ingredients
- Ciabatta bread
- Pea pesto (store-bought or homemade)
- Extra virgin olive oil
- Cheese (Parmesan, ricotta, or your preference)
- Lemon zest
- Fresh pea shoots (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the ciabatta bread into ½ inch thick pieces and place them on a baking tray.
- Toast the slices in the oven until golden brown, around 5-7 minutes.
- Remove from the oven and spread a generous amount of pea pesto on each slice.
- Drizzle with a high-quality extra virgin olive oil.
- Sprinkle your choice of cheese on top and add a dash of lemon zest.
- If you have fresh pea shoots, add them on top before serving.
- Serve warm as an appetizer or light lunch and enjoy!
Notes
