Description

A comforting creamy chicken casserole made with tender chicken, pasta, and a rich cheese sauce, perfect for family dinners or potlucks.


Ingredients

  • 2 cups cooked chicken, cut into bite-sized pieces
  • 4 cups cooked pasta (about 2 cups uncooked)
  • 3 tablespoons butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • ½ cup sour cream
  • 1 cup milk
  • 3 cups grated cheese (cheddar, Colby Jack, Swiss, or a combination)
  • ½ teaspoon red pepper flakes
  • Salt and black pepper to taste


Instructions

  1. Preheat your oven to 350°F and lightly grease a 9×13-inch baking dish.
  2. Cook your pasta according to package directions until al dente, drain well, and set aside.
  3. Melt butter in a large skillet or saucepan over medium heat. Add the onion and cook for 3-4 minutes until translucent.
  4. Add the minced garlic and cook for another minute, stirring constantly.
  5. Sprinkle the flour over the mixture and stir continuously for about 1 minute.
  6. Add the sour cream and milk to the pan, whisking constantly until the sauce thickens, about 3-5 minutes.
  7. Reduce heat to low and stir in 2½ cups of the grated cheese until melted and smooth.
  8. Add the cooked chicken, cooked pasta, red pepper flakes, salt, and black pepper, folding everything together gently.
  9. Transfer the mixture to the prepared baking dish, spreading it evenly and pressing down slightly.
  10. Sprinkle the reserved ½ cup of cheese on top.
  11. Bake for 20-30 minutes, until the top is melted and bubbly.
  12. Allow to cool for 5-10 minutes before serving.

Notes

You can use leftover rotisserie chicken for convenience. Feel free to customize the ingredients based on your preferences.
