Description
A comforting creamy chicken casserole made with tender chicken, pasta, and a rich cheese sauce, perfect for family dinners or potlucks.
Ingredients
- 2 cups cooked chicken, cut into bite-sized pieces
- 4 cups cooked pasta (about 2 cups uncooked)
- 3 tablespoons butter
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons all-purpose flour
- ½ cup sour cream
- 1 cup milk
- 3 cups grated cheese (cheddar, Colby Jack, Swiss, or a combination)
- ½ teaspoon red pepper flakes
- Salt and black pepper to taste
Instructions
- Preheat your oven to 350°F and lightly grease a 9×13-inch baking dish.
- Cook your pasta according to package directions until al dente, drain well, and set aside.
- Melt butter in a large skillet or saucepan over medium heat. Add the onion and cook for 3-4 minutes until translucent.
- Add the minced garlic and cook for another minute, stirring constantly.
- Sprinkle the flour over the mixture and stir continuously for about 1 minute.
- Add the sour cream and milk to the pan, whisking constantly until the sauce thickens, about 3-5 minutes.
- Reduce heat to low and stir in 2½ cups of the grated cheese until melted and smooth.
- Add the cooked chicken, cooked pasta, red pepper flakes, salt, and black pepper, folding everything together gently.
- Transfer the mixture to the prepared baking dish, spreading it evenly and pressing down slightly.
- Sprinkle the reserved ½ cup of cheese on top.
- Bake for 20-30 minutes, until the top is melted and bubbly.
- Allow to cool for 5-10 minutes before serving.
Notes
You can use leftover rotisserie chicken for convenience. Feel free to customize the ingredients based on your preferences.
