Ingredients

  • 8 ounces pasta (macaroni, rotini, or your choice)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/2 cup olives, sliced
  • 1 cup mozzarella cheese, cubed
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to the package instructions. Once al dente, drain and let it cool.
  2. Combine the cooled pasta with cherry tomatoes, cucumber, bell pepper, red onion, olives, and mozzarella cheese in a large mixing bowl.
  3. Whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper in a separate bowl until well mixed.
  4. Drizzle the dressing over the pasta salad and toss lightly until everything is evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving. Enjoy your fresh, homemade pasta salad!
