Ingredients
- 8 ounces pasta (macaroni, rotini, or your choice)
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, diced
- 1/2 cup olives, sliced
- 1 cup mozzarella cheese, cubed
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Once al dente, drain and let it cool.
- Combine the cooled pasta with cherry tomatoes, cucumber, bell pepper, red onion, olives, and mozzarella cheese in a large mixing bowl.
- Whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper in a separate bowl until well mixed.
- Drizzle the dressing over the pasta salad and toss lightly until everything is evenly coated.
