Ingredients
- 8 oz pasta (your choice)
- 2 tbsp olive oil
- 1 cup broccoli florets
- 1 cup bell peppers (sliced)
- 1 cup zucchini (sliced)
- 1 cup cherry tomatoes (halved)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Boil water in a large pot and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the broccoli, bell peppers, and zucchini. Sauté for about 5 minutes until they are slightly tender.
- Stir in the cherry tomatoes and cook for another 2 minutes until they soften.
- Pour in the heavy cream and bring it to a gentle simmer. Mix in the Parmesan cheese until it’s melted and creamy.
- Toss in the cooked pasta and stir everything together. Season generously with salt and pepper to taste.
