Ingredients

  • 8 oz pasta (your choice)
  • 2 tbsp olive oil
  • 1 cup broccoli florets
  • 1 cup bell peppers (sliced)
  • 1 cup zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Boil water in a large pot and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the broccoli, bell peppers, and zucchini. Sauté for about 5 minutes until they are slightly tender.
  3. Stir in the cherry tomatoes and cook for another 2 minutes until they soften.
  4. Pour in the heavy cream and bring it to a gentle simmer. Mix in the Parmesan cheese until it’s melted and creamy.
  5. Toss in the cooked pasta and stir everything together. Season generously with salt and pepper to taste.
