Description
A healthy and addictive snack made from zucchini, baked until crispy with olive oil and Parmesan.
Ingredients
- 2 medium zucchini (about 1 pound)
- ¾ teaspoon kosher salt, divided
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- ¼ cup finely grated Parmesan cheese
- Olive oil spray (or alternative oil spray)
Instructions
- Preheat your oven to 425°F and line a baking sheet with parchment paper, lightly coating it with olive oil spray.
- Slice the zucchini into ⅛-inch-thick rounds.
- Sprinkle the zucchini slices with ½ teaspoon of kosher salt and let them sit in a colander for 30 minutes to draw out moisture.
- Rinse the zucchini slices under cold water and blot them dry with paper towels.
- Arrange the dried zucchini in a single layer on the prepared baking sheet and spray lightly with olive oil.
- Bake for 15 minutes, checking for doneness at the 10-minute mark.
- Remove from the oven, sprinkle with remaining salt, pepper, garlic powder, and Parmesan, then return to the oven.
- Continue baking for another 15-20 minutes until crispy and golden brown, removing chips as they become done.
Notes
Serve immediately while still warm and crispy. Store leftovers in an airtight container in the refrigerator for 2-3 days.
