This oven baked chicken breast recipe features a magic seasoning blend with brown sugar that caramelizes beautifully and keeps the chicken juicy and flavorful.
Ingredients
- 4 chicken breasts, 5-6 oz (150-180g) each
- 2 teaspoons olive oil
- 1½ tablespoons brown sugar
- 1 teaspoon paprika
- 1 teaspoon dried oregano or thyme
- ¼ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Finely chopped fresh parsley (optional garnish)
Instructions
- Preheat your oven to 425°F (220°C) and prepare a baking tray with aluminum foil and parchment paper.
- Pound each chicken breast to about 0.6 inches (1.5 cm) thick for even cooking.
- In a small bowl, mix the brown sugar, paprika, dried oregano (or thyme), garlic powder, salt, and pepper.
- Place chicken breasts upside down on the tray, drizzle with 1 teaspoon of olive oil, and rub to distribute. Sprinkle generously with the seasoning mixture.
- Flip the chicken, drizzle with the remaining oil, and season the other side.
- Bake for 18 minutes until caramelized and golden. Check for doneness with a thermometer (165°F/75°C).
- Transfer to serving plates immediately and let rest for 3-5 minutes.
- Garnish with parsley if desired and serve hot.
Notes
For best results, ensure chicken is of even thickness to prevent dryness. This recipe also works well with chicken thighs by adjusting the cooking time to 25-30 minutes.
