Description
A simple and flavorful Oven Baked Asparagus with Parmesan that pairs beautifully with any main course.
Ingredients
- 1 pound asparagus
- 1 tablespoon olive oil
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- ¼ cup freshly grated Parmesan cheese (about 1 ounce)
- Zest and juice of one lemon
Instructions
- Preheat your oven to 400°F.
- Grate the Parmesan cheese and set aside.
- Zest the lemon using a microplane grater, then halve it and set aside.
- Rinse the asparagus under cold water and gently dry with a kitchen towel.
- Trim the tough ends off the asparagus by bending each stalk until it naturally snaps.
- Line a baking sheet with parchment paper. Arrange the asparagus on the sheet, drizzle with olive oil, sprinkle with salt and pepper, then gently toss to coat.
- Bake the asparagus in the center of the oven for 6-8 minutes until vibrant green and slightly tender but still crisp.
- Remove from the oven and scoot the stalks closer together. Sprinkle with grated Parmesan on top.
- Return to the oven and bake for an additional 2-3 minutes until the cheese has melted and starts to brown slightly.
- Transfer to a serving dish, then finish with lemon zest and a squeeze of lemon juice. Serve with extra lemon wedges on the side if desired.
Notes
For crispier asparagus, roast at a slightly higher temperature. Store leftovers in an airtight container in the refrigerator for up to 3 days.
