Ingredients

  • 5 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 2 tablespoons honey
  • 1½ cups jasmine rice, rinsed
  • 2½ cups chicken broth
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley


Instructions

  1. Pat the chicken thighs dry, season with salt and pepper, and sear skin-side down in a hot skillet with olive oil for 5-6 minutes.
  2. Flip the chicken and sear the other side for another 5-6 minutes, then remove from the pan.
  3. Add butter to the pan, melt it with the chicken drippings, then stir in minced garlic until fragrant.
  4. Add honey to the pan, allowing it to bubble for 30 seconds.
  5. Stir in rinsed rice, chicken broth, paprika, thyme, and parsley, mixing well.
  6. Place seared chicken back on top, cover, and simmer for 20-25 minutes until rice is tender and chicken reaches 165°F.
  7. Let rest for 5-10 minutes, then fluff rice and serve warm.

Notes

Use skin-on, bone-in chicken thighs for the best flavor. Rinse the rice thoroughly for better texture. Allow resting time after cooking for optimal results.
