Description
A comforting one-pan meal featuring golden-skinned chicken thighs glazed in honey and garlic, served over fluffy rice infused with rich pan juices.
Ingredients
- 5 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 tablespoons unsalted butter
- 5 cloves garlic, minced
- 2 tablespoons honey
- 1½ cups jasmine rice, rinsed
- 2½ cups chicken broth
- ½ teaspoon paprika
- ½ teaspoon dried thyme
- ½ teaspoon dried parsley
Instructions
- Pat the chicken thighs dry, season with salt and pepper, and sear skin-side down in a hot skillet with olive oil for 5-6 minutes.
- Flip the chicken and sear the other side for another 5-6 minutes, then remove from the pan.
- Add butter to the pan, melt it with the chicken drippings, then stir in minced garlic until fragrant.
- Add honey to the pan, allowing it to bubble for 30 seconds.
- Stir in rinsed rice, chicken broth, paprika, thyme, and parsley, mixing well.
- Place seared chicken back on top, cover, and simmer for 20-25 minutes until rice is tender and chicken reaches 165°F.
- Let rest for 5-10 minutes, then fluff rice and serve warm.
Notes
Use skin-on, bone-in chicken thighs for the best flavor. Rinse the rice thoroughly for better texture. Allow resting time after cooking for optimal results.
