Ingredients
- 1 cup old-fashioned oats
- 2/3 cup toasted shredded coconut
- 1/2 cup creamy peanut butter
- 1/2 cup ground flaxseed
- 1/3 cup honey
- 1/2 cup semisweet chocolate chips
- 1 tablespoon chia seeds (optional)
- 1 teaspoon vanilla extract
Instructions
- Toast the coconut in a 350°F (175°C) oven for 5-7 minutes until golden, then let cool.
- In a large bowl, combine oats, toasted coconut, peanut butter, ground flaxseed, chocolate chips, honey, vanilla extract, and chia seeds (if using). Stir until well mixed.
- Cover the bowl and refrigerate for 1-2 hours until the mixture is firm.
- Roll into one-inch balls using clean hands or a cookie scoop.
- Transfer to an airtight container and enjoy immediately or store in the fridge for up to a week or freeze for up to three months.
Notes
These energy bites are versatile; feel free to substitute honey for maple syrup for a vegan option or use sunflower seed butter for nut-free snacks.
