Description

Wholesome no-bake energy bites made with oats, peanut butter, and honey for a nutritious and satisfying snack.


Ingredients

  • 1 cup old-fashioned oats
  • 2/3 cup toasted shredded coconut
  • 1/2 cup creamy peanut butter
  • 1/2 cup ground flaxseed
  • 1/3 cup honey
  • 1/2 cup semisweet chocolate chips
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract


Instructions

  1. Toast the coconut in a 350°F (175°C) oven for 5-7 minutes until golden, then let cool.
  2. In a large bowl, combine oats, toasted coconut, peanut butter, ground flaxseed, chocolate chips, honey, vanilla extract, and chia seeds (if using). Stir until well mixed.
  3. Cover the bowl and refrigerate for 1-2 hours until the mixture is firm.
  4. Roll into one-inch balls using clean hands or a cookie scoop.
  5. Transfer to an airtight container and enjoy immediately or store in the fridge for up to a week or freeze for up to three months.
