Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs (lightly beaten)
  • 1 cup breadcrumbs (panko or regular)
  • 3 tbsp unsalted butter
  • 3 tbsp olive oil
  • 4 tbsp unsalted butter (for sauce)
  • 3 garlic cloves (minced)
  • 1/2 cup chicken broth
  • 1 tbsp lemon juice
  • 2 tbsp heavy cream
  • 1 tbsp parsley (chopped, for garnish)


Instructions

  1. Pound chicken breasts to an even thickness, then season both sides with salt, pepper, garlic powder, and onion powder.
  2. Dredge the chicken in flour, dip it in beaten eggs, and coat it with breadcrumbs.
  3. In a skillet, heat olive oil and butter over medium heat. Cook the chicken for 4-5 minutes on each side until golden brown and fully cooked (internal temperature should reach 165°F). Set the chicken aside.
  4. In the same skillet, sauté minced garlic in the remaining butter for 1-2 minutes. Add chicken broth and lemon juice, deglazing the pan. Stir in heavy cream and let the sauce simmer until it thickens.
  5. Return the cooked chicken to the skillet, allowing it to soak up the garlic butter sauce for a couple of minutes.
  6. Garnish with fresh parsley and serve immediately with your choice of sides.

Notes

For best results, pound the chicken for even cooking and use freshly grated parmesan for enhanced flavor.
