A refreshing treat combining mint and chocolate, perfect for hot days and a healthier alternative to store-bought popsicles.


Ingredients

  • 2 cups coconut milk (or any milk of your choice)
  • 1/4 cup fresh mint leaves
  • 1/4 cup honey or maple syrup (adjust based on sweetness preference)
  • 1/2 cup mini chocolate chips


Instructions

  1. Blend the coconut milk and fresh mint leaves in a blender until smooth.
  2. Add honey (or maple syrup) to the mixture and blend again until fully integrated.
  3. Incorporate mini chocolate chips with a spatula, ensuring they’re evenly distributed.
  4. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  5. Insert the popsicle sticks in the center of each mold.
  6. Freeze for at least 240-360 minutes or until completely solid.
  7. Unmold the popsicles by running the mold under warm water for a few seconds, then gently pull them out.

Notes

Choose the freshest mint leaves for optimal flavor. Store in an airtight container and consume within two weeks.
