A refreshing treat combining mint and chocolate, perfect for hot days and a healthier alternative to store-bought popsicles.
Ingredients
- 2 cups coconut milk (or any milk of your choice)
- 1/4 cup fresh mint leaves
- 1/4 cup honey or maple syrup (adjust based on sweetness preference)
- 1/2 cup mini chocolate chips
Instructions
- Blend the coconut milk and fresh mint leaves in a blender until smooth.
- Add honey (or maple syrup) to the mixture and blend again until fully integrated.
- Incorporate mini chocolate chips with a spatula, ensuring they’re evenly distributed.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert the popsicle sticks in the center of each mold.
- Freeze for at least 240-360 minutes or until completely solid.
- Unmold the popsicles by running the mold under warm water for a few seconds, then gently pull them out.
Notes
Choose the freshest mint leaves for optimal flavor. Store in an airtight container and consume within two weeks.
