Ingredients

  • 1 can pineapple rings
  • 1/2 cup maraschino cherries
  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup milk


Instructions

  1. Preheat your oven to 350°F (175°C) and grease your mini cake pans.
  2. Melt the butter over low heat and stir in the brown sugar until fully dissolved.
  3. Pour the butter-sugar mixture evenly into the bottom of your cake pans.
  4. Place a pineapple ring in the center of each, topping it with a cherry.
  5. Combine flour, baking powder, salt, and granulated sugar in a mixing bowl.
  6. Whisk together the egg, vanilla extract, and milk in a separate bowl until well mixed.
  7. Gradually add the wet ingredients to the dry mix, stirring until just combined.
  8. Spoon the batter over the pineapples and cherries in the pans.
  9. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  10. Allow to cool for a few minutes, then carefully invert onto serving plates.
