Ingredients
- 1 can pineapple rings
- 1/2 cup maraschino cherries
- 1/2 cup unsalted butter
- 3/4 cup brown sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C) and grease your mini cake pans.
- Melt the butter over low heat and stir in the brown sugar until fully dissolved.
- Pour the butter-sugar mixture evenly into the bottom of your cake pans.
- Place a pineapple ring in the center of each, topping it with a cherry.
- Combine flour, baking powder, salt, and granulated sugar in a mixing bowl.
- Whisk together the egg, vanilla extract, and milk in a separate bowl until well mixed.
- Gradually add the wet ingredients to the dry mix, stirring until just combined.
- Spoon the batter over the pineapples and cherries in the pans.
- Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- Allow to cool for a few minutes, then carefully invert onto serving plates.
Notes
For best results, use non-stick spray or line the mini cake pans with parchment paper. Consider adding spices like cinnamon for extra flavor.
