Description

Mini meatloaf brings a delightful twist to a classic dish, transforming it into a fun, bite-sized meal that’s perfect for any occasion.

Ingredients

  • 1 1/2 pounds lean ground beef (or ground turkey, 680 grams)
  • 2/3 cup panko bread crumbs (or regular breadcrumbs, 100 grams)
  • 1/2 cup onion (chopped, 70 grams)
  • 1 Tablespoon barbecue sauce
  • 1 Tablespoon mustard
  • 1/2 teaspoon garlic powder
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 egg (lightly beaten)
  • 1/3 cup light brown sugar (73 grams)
  • 1/2 cup ketchup (120 grams)
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Prepare the meatloaf sauce: In a small bowl, mix together brown sugar, ketchup, Dijon mustard, and nutmeg. Set aside.
  3. Mix the meatloaf mixture: In a large bowl, combine the ground beef, breadcrumbs, chopped onion, barbecue sauce, mustard, chili powder, garlic powder, salt, pepper, and lightly beaten egg. Use your hands or a wooden spoon to mix until well combined.
  4. Fill the muffin tin: Lightly grease a muffin tin. Divide the meat mixture among the 12 muffin cups, pressing down firmly to fill each cup completely.
  5. Bake: Place the tin in the preheated oven and bake for 15 minutes. Remove from the oven and use a paper towel to soak up any excess grease. Generously spoon the prepared meatloaf sauce over each mini meatloaf.
  6. Finish baking: Return to the oven for an additional 10-15 minutes or until the meat is cooked through.
  7. Serve: Enjoy your mini meatloafs with mashed potatoes, fresh veggies, or a side salad.

Notes

Feel free to substitute ground turkey for a leaner option, or use gluten-free breadcrumbs if desired!
