Description

  • 2 large eggs, lightly beaten
  • 2 teaspoons pure vanilla extract
  • ¾ cup mini chocolate chips (or 1 cup regular size)


Instructions

  1. Preheat the oven to 375°F and grease a 24-cup mini muffin pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, stir together the Greek yogurt, maple syrup, melted butter, beaten eggs, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir gently until combined.
  5. Fold in the mini chocolate chips.
  6. Divide the batter among the prepared muffin cups, filling them nearly to the top.
  7. Bake for 10-12 minutes until lightly golden. Let cool before transferring to a wire rack.

Notes

For best results, use Greek yogurt instead of regular yogurt. You can customize by swapping out the chocolate chips for fruit or sprinkles.
