Ingredients

  • 4 ears Fresh Corn (or frozen corn)
  • 1/2 cup Mayonnaise (or Greek yogurt)
  • 1/2 cup Cotija Cheese (or feta)

  • 2 tbsp Lime Juice
  • 1/4 cup Fresh Cilantro, chopped
  • Salt and Pepper, to taste


Instructions

  1. Cook the corn: Boil for about 8-10 minutes until tender. Drain and let it cool.
  2. Prepare the dressing: In a large bowl, mix mayo, lime juice, chili powder, salt, and pepper.
  3. Combine everything: Once the corn is cool, add it to the dressing and mix well.
  4. Add cheese and cilantro: Fold in the Cotija cheese and chopped cilantro.
  5. Serve: You can serve it immediately or let it chill to enhance the flavors.

Notes

Roast the corn for extra flavor and adjust spice level to taste. Add diced jalapeños for a spicier version.
