A vibrant pasta salad inspired by the iconic Mexican street corn, featuring sweet corn, zesty lime, and creamy cotija cheese.
Ingredients
- 8 oz pasta (penne or rotini)
- 2 cups corn (fresh, frozen, or canned)
- 1 cup cotija cheese, crumbled
- 1/2 cup mayonnaise
- 1/4 cup lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine corn and cotija cheese.
- In a small bowl, whisk together mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper.
- Add the cooled pasta to the corn mixture and drizzle the dressing over the top.
- Toss everything together until well coated.
