Ingredients
- 2 cups long-grain white rice (or jasmine rice)
- 2 tablespoons olive oil or vegetable oil
- 1 onion (finely chopped)
- 2 cloves garlic (minced)
- 1 tomato (fresh or canned, diced)
- 4 cups chicken or vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- Fresh cilantro (optional for garnish)
Instructions
- Heat 2 tablespoons of oil in a large skillet over medium heat.
- Add the chopped onion and sauté until translucent, roughly 3-4 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the rice to the skillet, stirring frequently for about 2-3 minutes until it lightly toasts and turns golden.
- Mix in the diced tomato (with juices), broth, cumin, chili powder, and salt. Bring to a boil.
- Reduce the heat to low, cover, and let it simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff with a fork and top with fresh cilantro before serving.
Notes
Feel free to swap long-grain rice for brown rice if you prefer a heartier version.
