Description

Ingredients

  • 2 cups long-grain white rice
  • 4 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt, to taste
  • Chopped cilantro for garnish (optional)


Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent.
  3. Stir in the minced garlic and cook for an additional 30 seconds.
  4. Add the rice, stirring gently for a few minutes until it starts to lightly toast.
  5. Mix in the cumin, chili powder, and salt. Pour in the broth and bring the mixture to a boil.
  6. Reduce heat to low, cover, and let it simmer for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
  7. Fluff the rice with a fork and garnish with chopped cilantro, if desired. Serve warm.

Notes

Rinse the rice to remove excess starch and prevent stickiness. Feel free to experiment with veggies or different herbs for added flavor.
