Recreate the delicious flavors of Taco Bell’s Mexican Pizza at home with this easy and customizable recipe.
Ingredients
- 8 flour tortillas (or corn tortillas)
- 1 lb ground beef
- 2 tbsp taco seasoning
- 1/4 cup water
- 4 tbsp enchilada sauce
- 8 oz refried beans (about 1/2 can)
- 1/2 cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)
- 1 tomato (Roma or beefsteak, seeds removed and diced)
- 1 small red onion (diced)
- 1/4 cup black olives
- 1/4 cup sour cream
- 2 green onions (finely diced)
Instructions
- Cook the ground beef: In a large skillet over medium heat, add the ground beef. Use a spatula to break it into smaller pieces. Sauté for 5-8 minutes until browned and cooked through. Drain excess grease.
- Season the mixture: Stir in taco seasoning, water, and 4 tbsp of enchilada sauce. Mix well and let it simmer for about 2 minutes.
- Assemble the pizzas: Spread a layer of refried beans on one tortilla. Top with a generous portion of the seasoned beef, followed by a sprinkle of shredded cheese. Place another tortilla on top.
- Add toppings: Spread 1 tbsp of enchilada sauce over the top tortilla and sprinkle with additional shredded cheese.
- Cook using your method of choice:
- Air Fryer: Preheat to 400°F. Cook each pizza for 5 minutes until the cheese melts.
- Oven Baking: Preheat to 350°F. Arrange pizzas on a lined sheet pan and bake for 8-10 minutes.
- Pan Frying: In a skillet with a lid, heat a splash of oil. Cook each pizza for 4-5 minutes, covered, until the cheese is melted.
- Final touches: Remove cooked pizzas and serve topped with diced tomatoes, red onion, olives, a dollop of sour cream, and green onions.
