Description

A comforting, cheesy casserole layered with tortillas and packed with taco flavors, perfect for busy weeknights or potlucks.


Ingredients

  • 1 lb ground beef (or ground turkey/chicken)
  • 912 tortillas (flour or corn)
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
  • 1 jar salsa (mild/medium/hot)
  • 1 packet taco seasoning (or homemade)
  • 1 cup sour cream (for serving; Greek yogurt works too)
  • Chopped green onions, for garnish
  • Optional: extra cheese for topping


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Brown the beef in a skillet over medium heat until fully cooked, breaking it up as it cooks.
  3. Drain excess fat to keep the casserole from getting greasy.
  4. Add taco seasoning, black beans, corn, and salsa. Stir well and simmer for 5 minutes.
  5. Layer tortillas to cover the bottom of the baking dish.
  6. Spread a layer of the beef mixture on top.
  7. Sprinkle with cheese and repeat layers, finishing with cheese on top.
  8. Bake covered with foil for 25 minutes.
  9. Uncover and bake for an additional 10–15 minutes until cheese is bubbly and lightly golden.
  10. Rest for 5–10 minutes before slicing. Top with sour cream and green onions.

Notes

For cleaner slices, use a sharp knife and allow the dish to cool slightly before serving.
