Ingredients
- 4 cups green cabbage, shredded
- 1 cup black beans, rinsed and drained
- 1/2 cup bell peppers, diced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup mayonnaise
- 1 tablespoon taco seasoning
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Combine the shredded cabbage, black beans, diced bell peppers, and chopped cilantro in a large bowl.
- Mix the mayonnaise, taco seasoning, lime juice, salt, and pepper in a separate bowl until smooth.
- Pour the dressing over the cabbage mixture, tossing everything together until well combined.
- Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.
Notes
For a lighter version, substitute Greek yogurt for mayonnaise. You can also use corn instead of black beans for added sweetness.
