Description

A crunchy, colorful side dish that combines cabbage with zesty taco spices for a burst of flavor.


Ingredients

  • 4 cups green cabbage, shredded
  • 1 cup black beans, rinsed and drained
  • 1/2 cup bell peppers, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon taco seasoning
  • 1 tablespoon lime juice
  • Salt and pepper to taste


Instructions

  1. Combine the shredded cabbage, black beans, diced bell peppers, and chopped cilantro in a large bowl.
  2. Mix the mayonnaise, taco seasoning, lime juice, salt, and pepper in a separate bowl until smooth.
  3. Pour the dressing over the cabbage mixture, tossing everything together until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.

Notes

For a lighter version, substitute Greek yogurt for mayonnaise. You can also use corn instead of black beans for added sweetness.
