Description

A flavorful marinade that transforms chicken into a fiesta of smoky and zesty flavors, perfect for grilling.

Ingredients

  • 1 cup olive oil
  • 1/4 cup lime juice
  • 1 tablespoon chili powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 2 pounds chicken (breasts or thighs)

Instructions

  1. In a large bowl, whisk together the olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  2. Place the chicken in a zip-top bag or a shallow dish.
  3. Pour the marinade over the chicken, ensuring it’s well-coated.
  4. Seal the bag or cover the dish, then refrigerate for at least 1 hour, preferably overnight.
  5. When ready to cook, preheat your grill to medium-high heat.
  6. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until cooked through and marked.
  7. Serve hot and enjoy!

Notes

For richer flavor, marinate overnight. This marinade also works great with pork and shrimp.
