A flavorful marinade that transforms chicken into a fiesta of smoky and zesty flavors, perfect for grilling.
Ingredients
- 1 cup olive oil
- 1/4 cup lime juice
- 1 tablespoon chili powder
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- 2 pounds chicken (breasts or thighs)
Instructions
- In a large bowl, whisk together the olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
- Place the chicken in a zip-top bag or a shallow dish.
- Pour the marinade over the chicken, ensuring it’s well-coated.
- Seal the bag or cover the dish, then refrigerate for at least 1 hour, preferably overnight.
- When ready to cook, preheat your grill to medium-high heat.
- Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until cooked through and marked.
- Serve hot and enjoy!
Notes
For richer flavor, marinate overnight. This marinade also works great with pork and shrimp.
