Delightful grilled shrimp kabobs marinated in zesty lemon and fragrant herbs, paired with colorful vegetables.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 bell pepper, cut into chunks (any color)
- 1 red onion, cut into chunks
- 2 cups cherry tomatoes
- Skewers (wooden or metal)
Instructions
- In a large bowl, mix together the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper.
- Add the shrimp to the marinade, ensuring they’re well coated. Let them sit for 15-30 minutes.
- Thread the marinated shrimp, bell pepper chunks, onion chunks, and cherry tomatoes onto the skewers, alternating as you go.
- Preheat your grill to medium-high heat.
- Grill the skewers for about 2-3 minutes on each side, or until the shrimp turns opaque and is cooked through.
- Serve hot with your favorite sides.
Notes
If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
