Delightful grilled shrimp kabobs marinated in zesty lemon and fragrant herbs, paired with colorful vegetables.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 bell pepper, cut into chunks (any color)
  • 1 red onion, cut into chunks
  • 2 cups cherry tomatoes
  • Skewers (wooden or metal)


Instructions

  1. In a large bowl, mix together the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper.
  2. Add the shrimp to the marinade, ensuring they’re well coated. Let them sit for 15-30 minutes.
  3. Thread the marinated shrimp, bell pepper chunks, onion chunks, and cherry tomatoes onto the skewers, alternating as you go.
  4. Preheat your grill to medium-high heat.
  5. Grill the skewers for about 2-3 minutes on each side, or until the shrimp turns opaque and is cooked through.
  6. Serve hot with your favorite sides.

Notes

If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
