Ingredients

  • 2 lbs ground beef (85% or 80% lean)
  • 1 medium onion, finely chopped
  • 1 teaspoon olive oil
  • 2 large eggs
  • 3 garlic cloves, minced
  • 2 tablespoons ketchup
  • 3 tablespoons fresh parsley, finely chopped
  • ¾ cup Panko breadcrumbs
  • ⅓ cup milk
  • 1 teaspoon salt, or to taste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon ground black pepper
  • ¾ cup ketchup (for glaze)
  • 1½ teaspoons white vinegar
  • 2 tablespoons brown sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder


Instructions

  1. Preheat your oven to 350°F and line a rimmed baking sheet with parchment paper.
  2. In a medium skillet, heat olive oil over medium heat and sauté chopped onions until softened and golden, about 5-7 minutes. Remove and let cool.
  3. In a large bowl, combine all meatloaf ingredients including the cooled onions. Mix gently until combined.
  4. Shape the mixture into a loaf about 8 inches long, 4 inches wide, and 3 inches tall on the prepared baking sheet.
  5. Bake uncovered in the preheated oven for 40 minutes.
  6. While the meatloaf bakes, whisk together the glaze ingredients in a small bowl.
  7. After 40 minutes, remove the meatloaf from the oven and spread the glaze evenly over the top. Bake for an additional 20 minutes, until the internal temperature reaches 160°F.
  8. Let the meatloaf rest for 10-15 minutes before slicing.

Notes

Never overmix the meat mixture to keep the meatloaf moist. Sautéing onions enhances their flavor and texture.
