Ingredients
- 2 lbs ground beef (85% or 80% lean)
- 1 medium onion, finely chopped
- 1 teaspoon olive oil
- 2 large eggs
- 3 garlic cloves, minced
- 2 tablespoons ketchup
- 3 tablespoons fresh parsley, finely chopped
- ¾ cup Panko breadcrumbs
- ⅓ cup milk
- 1 teaspoon salt, or to taste
- 1 teaspoon Italian seasoning
- ½ teaspoon ground black pepper
- ¾ cup ketchup (for glaze)
- 1½ teaspoons white vinegar
- 2 tablespoons brown sugar
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Instructions
- Preheat your oven to 350°F and line a rimmed baking sheet with parchment paper.
- In a medium skillet, heat olive oil over medium heat and sauté chopped onions until softened and golden, about 5-7 minutes. Remove and let cool.
- In a large bowl, combine all meatloaf ingredients including the cooled onions. Mix gently until combined.
- Shape the mixture into a loaf about 8 inches long, 4 inches wide, and 3 inches tall on the prepared baking sheet.
- Bake uncovered in the preheated oven for 40 minutes.
- While the meatloaf bakes, whisk together the glaze ingredients in a small bowl.
- After 40 minutes, remove the meatloaf from the oven and spread the glaze evenly over the top. Bake for an additional 20 minutes, until the internal temperature reaches 160°F.
- Let the meatloaf rest for 10-15 minutes before slicing.
Notes
Never overmix the meat mixture to keep the meatloaf moist. Sautéing onions enhances their flavor and texture.
