Delicious shrimp skewers marinated in a margarita-inspired blend of lime juice and tequila, perfect for summer barbecues.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/4 cup olive oil
- 1/4 cup fresh lime juice
- 2 tablespoons tequila
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- Skewers (soaked in water if wooden)
Instructions
- Whisk together olive oil, lime juice, tequila, honey, garlic, cilantro, salt, and pepper in a medium bowl.
- Add the shrimp and toss to coat. Cover and refrigerate for 30 minutes.
- Preheat your grill to medium-high heat.
- Thread the marinated shrimp onto the skewers.
- Grill the shrimp for 2-3 minutes on each side until they’re charred and cooked through.
- Serve hot, garnished with lime wedges.
Notes
For a family-friendly version, substitute tequila with lime soda. You can also replace cilantro with parsley if preferred. Always soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
