Ingredients
- 2 cups cooked chicken, shredded (use rotisserie for convenience)
- 1 cup shredded cheese (cheddar or mozzarella works well)
- 2 cloves garlic, minced
- 4 large lettuce leaves or low-carb wraps
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: diced tomatoes, avocado, sour cream
Instructions
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté until fragrant (about 1 minute).
- Stir in the shredded chicken, seasoning with salt and pepper.
- Heat the mixture until warm, then remove from heat.
- Lay out the lettuce leaves or low-carb wraps on a flat surface.
- Scoop a portion of the chicken mixture onto each leaf or wrap.
- Top with shredded cheese and any other toppings you fancy.
- Wrap tightly, slice in half if you like, and enjoy your meal!
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. They can be frozen for up to 3 months.
