Ingredients
- Grilled Chicken Breast: 2-3 pieces, marinated
- Pasta: 8 ounces (such as penne or rotini)
- Cherry Tomatoes: 1 pint, halved
- Fresh Mozzarella: 8 ounces, diced or mozzarella balls
- Fresh Basil: 1 cup, chopped
- Extra Virgin Olive Oil: ¼ cup
- Balsamic Vinegar: 2 tablespoons
- Salt & Pepper: to taste
- Crushed Red Pepper Flakes: optional, for heat
Instructions
- Prep the chicken: Season the chicken breasts with salt, pepper, and olive oil. Grill over medium heat for 6-7 minutes per side until cooked through. Let rest before slicing.
- Cook the pasta: Boil salted water and cook pasta according to package instructions until al dente. Drain and rinse under cold water.
- Make the dressing: In a small bowl, whisk olive oil, balsamic vinegar, and a pinch of salt.
- Layer it up: In a serving dish, layer pasta, grilled chicken, cherry tomatoes, mozzarella, and basil. Drizzle dressing over each layer.
- Finish with crushed red pepper flakes (if using) and a sprinkle of salt and pepper.
Notes
