Description

A refreshing tropical treat made with strawberries, mango, and pineapple for a perfect summer snack.


Ingredients

  • 1 1/2 cups cubed pineapple
  • 1 cup diced mango
  • 1/2 cup coconut milk (full-fat canned is best)
  • 2 1/2 cups strawberries
  • 1/4 cup orange juice
  • 1 tablespoon honey or agave (optional, adjust to taste)


Instructions

  1. Blend the Tropical Base: In a blender, combine the pineapple, mango, and coconut milk. Blend until completely smooth, adding more coconut milk if necessary. Taste, and if desired, add a drizzle of honey or agave. Pour this mix into a liquid measuring cup.
  2. Make the Strawberry Layer: In the same blender, add the strawberries, orange juice, and honey (if using). Blend until smooth. Again, taste and adjust sweetness if needed.
  3. Layer the Mixtures: Using a spoon or small funnel, alternate scoops of the pineapple and strawberry mixtures into popsicle molds. For distinct layers, be careful not to mix them too much.
  4. Freeze and Enjoy: Insert popsicle sticks and freeze for at least 180-240 minutes until completely solid. To remove from molds, run the sides under cool water briefly, then gently wiggle the stick to release. Enjoy right away or transfer to a freezer bag for later.

Notes

Serve atop crushed ice or pair with coconut sorbet for a luxury experience. Store in the freezer for up to 2-3 weeks.
