Description

Refreshing popsicles made with ripe kiwis and sweet watermelon, perfect for hot summer days.


Ingredients

  • 2 ripe kiwis
  • 2 cups seedless watermelon, diced
  • 1 tablespoon lime juice (optional)
  • 1-2 tablespoons honey or agave syrup (optional, to taste)


Instructions

  1. Start by peeling the kiwis and chopping them into small pieces.
  2. In a blender, puree the diced watermelon until it’s completely smooth. If you like a citrusy kick, add lime juice and sweetener to taste.
  3. Grab your popsicle molds and place a layer of kiwi pieces at the bottom.
  4. Pour the watermelon puree over the kiwis, filling each mold.
  5. Insert wooden sticks into the molds and place them in the freezer. Let them freeze for at least 240-360 minutes, or until solid.
  6. When ready to serve, run warm water over the outside of the molds for a few seconds to help release the popsicles.

Notes

Store leftovers in a plastic freezer bag or airtight container, separating layers with parchment paper to prevent sticking. They can be kept in the freezer for up to two months.
