Description
Refreshing popsicles made with ripe kiwis and sweet watermelon, perfect for hot summer days.
Ingredients
- 2 ripe kiwis
- 2 cups seedless watermelon, diced
- 1 tablespoon lime juice (optional)
- 1-2 tablespoons honey or agave syrup (optional, to taste)
Instructions
- Start by peeling the kiwis and chopping them into small pieces.
- In a blender, puree the diced watermelon until it’s completely smooth. If you like a citrusy kick, add lime juice and sweetener to taste.
- Grab your popsicle molds and place a layer of kiwi pieces at the bottom.
- Pour the watermelon puree over the kiwis, filling each mold.
- Insert wooden sticks into the molds and place them in the freezer. Let them freeze for at least 240-360 minutes, or until solid.
- When ready to serve, run warm water over the outside of the molds for a few seconds to help release the popsicles.
Notes
Store leftovers in a plastic freezer bag or airtight container, separating layers with parchment paper to prevent sticking. They can be kept in the freezer for up to two months.
