Ingredients

  • 1.5 lbs boneless, skinless chicken breast (3-4 breasts)
  • 2-3 tablespoons butter (about 1 tablespoon per breast)
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon dried thyme
  • ½ teaspoon ground mustard
  • ½ teaspoon dried basil
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon sea salt
  • ¼ teaspoon paprika
  • ½ teaspoon brown sugar


Instructions

  1. Prepare the seasoning by mixing all seasoning ingredients in a small bowl and set aside.
  2. Tenderize the chicken by pounding it to an even thickness of about 1 to 1.5 inches.
  3. Season both sides of the chicken breasts generously with the prepared seasoning.
  4. Heat ½ tablespoon of butter in a nonstick pan over medium-high heat. Sear the chicken for 2-3 minutes per side until golden brown.
  5. Flip the chicken, add another ½ tablespoon of butter if desired, cover, reduce heat to medium, and cook until chicken reaches an internal temperature of 160°F.
  6. Remove from heat and let rest for about 5 minutes.
  7. Slice against the grain and serve as desired.

Notes

For meal prep, store in an airtight container in the refrigerator for up to 5 days. This chicken also freezes well for up to 3 months.
