A quick and easy recipe for cookies that combine the classic chewy brownie texture with the convenience of brownie mix.
Ingredients
- 1 box (18.3 oz) brownie mix
- 1 large egg
- 1/3 cup vegetable oil
- 1/2 cup chocolate chips (optional)
- 1/4 cup nuts (chopped walnuts or pecans, optional)
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the brownie mix, egg, and vegetable oil until fully blended.
- Gently fold in the chocolate chips and nuts if using.
- Use a cookie scoop to portion the dough onto a parchment-lined baking sheet, leaving space between each scoop.
- Bake for 10-12 minutes until the edges are set and tops look slightly cracked.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a richer flavor, substitute vegetable oil with melted coconut oil or butter.
