A delightful side dish that combines the natural sweetness of roasted carrots with honey, perfect for any meal.
Ingredients
- 1 lb carrots, peeled and cut into sticks
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon lemon zest
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the carrots, honey, olive oil, butter, salt, and black pepper, tossing well to coat.
- Spread the carrots in a single layer on the prepared baking sheet.
- Roast in the oven for 25-30 minutes, until tender and caramelized.
- Remove from the oven and sprinkle fresh parsley, dill, and lemon zest over the top, tossing gently to combine.
- Serve warm and enjoy!
Notes
For a vegan version, replace butter with additional olive oil and use agave syrup instead of honey.
