Ingredients

  • 1 lb carrots, peeled and cut into sticks
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon zest


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the carrots, honey, olive oil, butter, salt, and black pepper, tossing well to coat.
  3. Spread the carrots in a single layer on the prepared baking sheet.
  4. Roast in the oven for 25-30 minutes, until tender and caramelized.
  5. Remove from the oven and sprinkle fresh parsley, dill, and lemon zest over the top, tossing gently to combine.
  6. Serve warm and enjoy!

Notes

For a vegan version, replace butter with additional olive oil and use agave syrup instead of honey.
