Ingredients

  • 2 lbs carrots (peeled and sliced diagonally about 1/2 inch thick)
  • 1 tbsp olive oil (extra virgin)
  • 1 tbsp butter (melted)
  • 2 tbsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp freshly chopped parsley (for garnish)


Instructions

  1. Prepare the carrots: Start by peeling and slicing the 2 lbs of carrots diagonally into pieces about 1/2 inch thick.
  2. Sauté: In a large skillet, heat the 1 tablespoon of extra virgin olive oil over medium heat. Add the sliced carrots and sauté for about 5-7 minutes, stirring occasionally, until they are tender yet still have a slight crunch.
  3. Make the glaze: While the carrots are cooking, mix together 1 tablespoon of melted butter, 2 tablespoons of honey, 1 teaspoon of salt, and 1/2 teaspoon of black pepper in a small bowl.
  4. Combine: Pour the honey glaze over the sautéed carrots in the skillet and stir well to coat.
  5. Caramelize: Continue cooking for an additional 3-5 minutes, stirring occasionally until the glaze thickens and slightly caramelizes.
  6. Garnish and serve: Remove from heat, sprinkle with 1 tablespoon of freshly chopped parsley, and serve warm.

Notes

For a vegan option, substitute the butter with more olive oil. Adjust sweetness with additional honey if desired.
