Description
Delicious honey glazed carrots, a sweet and sticky side dish that elevates any meal.
Ingredients
- 2 lbs carrots (peeled and sliced diagonally about 1/2 inch thick)
- 1 tbsp olive oil (extra virgin)
- 1 tbsp butter (melted)
- 2 tbsp honey
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp freshly chopped parsley (for garnish)
Instructions
- Prepare the carrots: Start by peeling and slicing the 2 lbs of carrots diagonally into pieces about 1/2 inch thick.
- Sauté: In a large skillet, heat the 1 tablespoon of extra virgin olive oil over medium heat. Add the sliced carrots and sauté for about 5-7 minutes, stirring occasionally, until they are tender yet still have a slight crunch.
- Make the glaze: While the carrots are cooking, mix together 1 tablespoon of melted butter, 2 tablespoons of honey, 1 teaspoon of salt, and 1/2 teaspoon of black pepper in a small bowl.
- Combine: Pour the honey glaze over the sautéed carrots in the skillet and stir well to coat.
- Caramelize: Continue cooking for an additional 3-5 minutes, stirring occasionally until the glaze thickens and slightly caramelizes.
- Garnish and serve: Remove from heat, sprinkle with 1 tablespoon of freshly chopped parsley, and serve warm.
Notes
For a vegan option, substitute the butter with more olive oil. Adjust sweetness with additional honey if desired.
