Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon grated ginger
  • Cooked rice or quinoa for serving
  • Your choice of vegetables (bell peppers, broccoli, snap peas work great!)
  • Green onions, sliced for garnish
  • Sesame seeds for garnish


Instructions

  1. In a bowl, whisk together honey, soy sauce, garlic, and ginger until well-combined.
  2. Heat olive oil in a large pan over medium heat.
  3. Add the shrimp to the pan and cook for 2-3 minutes until they turn pink and opaque.
  4. Pour the honey garlic mixture over the cooked shrimp and stir to coat evenly.
  5. Allow the sauce to simmer for an additional 2-3 minutes until it thickens slightly.
  6. Serve the shrimp over bowls of cooked rice or quinoa, topped with an assortment of vegetables.
  7. Garnish with green onions and a sprinkle of sesame seeds for a final touch.
