Ingredients
- 2 large boneless, skinless chicken breasts, cut horizontally to make 4 thinner cutlets
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- Chopped scallions (for garnish)
- 3 tablespoons low-sodium soy sauce
- 1/4 cup honey
- 1/4 cup chicken broth
- 1/2 tablespoon lemon juice or apple cider vinegar
- 4 cloves garlic, minced
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 400°F and move the rack to the top third.
- In a small bowl, whisk together soy sauce, honey, chicken broth, lemon juice, minced garlic, and cornstarch. Set this aside.
- Slice each chicken breast horizontally to create 4 thinner cutlets. Season both sides with salt and pepper.
- Heat olive oil and butter in an oven-safe skillet over medium-high heat. Add chicken cutlets and cook for 4-5 minutes per side until golden brown.
- Pour the sauce mixture into the skillet between the chicken pieces, allowing it to bubble for 30 seconds. Spoon some sauce over each piece of chicken.
- Transfer the skillet to the preheated oven and bake for 4-5 minutes until chicken reaches 165°F and sauce thickens into a glossy glaze.
- Serve immediately, garnishing with scallions if desired.
Notes
For added flavor, consider using extra lemon juice if you prefer less sweetness. Store leftover chicken in a sealed container for 3-4 days.
