  • 2 large boneless, skinless chicken breasts, cut horizontally to make 4 thinner cutlets
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Chopped scallions (for garnish)
  • 3 tablespoons low-sodium soy sauce
  • 1/4 cup honey
  • 1/4 cup chicken broth
  • 1/2 tablespoon lemon juice or apple cider vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon cornstarch


Instructions

  1. Preheat your oven to 400°F and move the rack to the top third.
  2. In a small bowl, whisk together soy sauce, honey, chicken broth, lemon juice, minced garlic, and cornstarch. Set this aside.
  3. Slice each chicken breast horizontally to create 4 thinner cutlets. Season both sides with salt and pepper.
  4. Heat olive oil and butter in an oven-safe skillet over medium-high heat. Add chicken cutlets and cook for 4-5 minutes per side until golden brown.
  5. Pour the sauce mixture into the skillet between the chicken pieces, allowing it to bubble for 30 seconds. Spoon some sauce over each piece of chicken.
