Ingredients
- 2 lbs carrots, peeled and cut into 1-inch pieces
- 3 tablespoons olive oil
- 3 tablespoons butter, melted
- 3 tablespoons honey
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 cup grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, combine the cut carrots.
- In a separate small bowl, whisk together the olive oil, melted butter, honey, minced garlic, salt, and pepper until well blended.
- Pour the glaze over the carrots, tossing until they are evenly coated.
- Spread the carrots on the prepared baking sheet in a single layer, avoiding overcrowding.
- Roast in the oven for 20 to 25 minutes, tossing halfway through, until the carrots are tender and slightly caramelized.
- If desired, sprinkle with Parmesan cheese and return to the oven for an additional 2 minutes until the cheese melts.
- Serve immediately and enjoy!
Notes
Leftover carrots can be stored in an airtight container in the fridge for up to 3 days. To reheat, warm in a preheated oven at 350°F (175°C).
