Ingredients

  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 3 tablespoons butter, melted
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the cut carrots.
  3. In a separate small bowl, whisk together the olive oil, melted butter, honey, minced garlic, salt, and pepper until well blended.
  4. Pour the glaze over the carrots, tossing until they are evenly coated.
  5. Spread the carrots on the prepared baking sheet in a single layer, avoiding overcrowding.
  6. Roast in the oven for 20 to 25 minutes, tossing halfway through, until the carrots are tender and slightly caramelized.
  7. If desired, sprinkle with Parmesan cheese and return to the oven for an additional 2 minutes until the cheese melts.
  8. Serve immediately and enjoy!

Notes

Leftover carrots can be stored in an airtight container in the fridge for up to 3 days. To reheat, warm in a preheated oven at 350°F (175°C).
